Annie at Just Baked SLO was kind enough to meet with me despite her busy morning. The first thing I noticed when I walked in to her bakery was the smell. OHHHHHH!!!! The smell was to...die...for. I mean, how many things in life smell better than fresh baked cookies in the morning?
As I walked in, she had just finished mixing the dough for a batch of her Flagship Chocolate Chip Cookies and was getting ready to cut several other delicious bakery goodies.
The brownies were ready, some lemon bars were already cut and displayed for purchase and a batch of blueberry scones were ready to go into the oven. As we talked, she was putting a batch of the cookies on a tray and they baked while I was there. They came out with a gooey deliciousness that only a fresh baked cookie can have. She told me about some of the wedding cakes she had done and how the business got started.
Basically, I love her work ethic and even more, I love her desserts! Annie would be wonderful to work with and I have no doubt that she could easily create the cake of your dreams or the dessert bar you always wanted. She's very easy to talk to and she really loves what she does. I will definitely be adding her to my preferred vendors list. :)
1. Do you do more than just cakes?
We do! Dessert buffets are actually how we got started in weddings. We offer a wide range of menu options to fit just about any taste. We also offer setup and display piece rental services.
In all honesty, I remember being mortified by the idea of making wedding cakes, but now they are one of my favorite things to do!
2. How do you price your cakes? By the slice, design, flavors, etc.?
Our tiered cakes are priced by the serving. Our buttercream cakes start at $5.75/serving. Design, flavors, and things like fondant can add additional cost to the cake.
3. Is there a fee for delivery or set-up?
Yes. Our delivery fee for events is $1.50/mile, one-way from the bakery, with a minimum charge of $30. All wedding cake deliveries include setup, and dessert buffet setup ranges between $35–$45.
4. How far in advance should I order my cake?
We recommend reserving your wedding date with us as soon as possible. We book a maximum of two weddings each day in order to provide the highest quality products and best service to each of our clients, and our schedule is filling up fast this year!
5. How did you get into the dessert business? How long have you done it?
I met my former business partner while working the line at the Black Cat Bistro in Cambria. After we both moved on from the restaurant, we started baking these chocolate chip cookies, each time making some sort of change or addition to them. People started to say, “You guys should sell these, they are the BEST chocolate chip cookies I’ve ever had!” Naturally, we thought they were crazy – what business did we have selling cookies?? But enough people said it that we decided to see what it would take. From that, the Flagship Chocolate Chip Cookie, and Just Baked SLO were born. That was in November of 2010, and I took over ownership of the company and began to expand the business more in the summer of 2012. The storefront – I call it the Pastry Bar – opened in December of 2014.
6. How many weddings have you done?
I’d say I’m pretty close to the 100 mark! It’s really crazy to think about that. I did just over 50 last year, and have over 60 on the books so far for this year. I am so grateful to each of my clients for selecting me to be a part of their wedding day, and for the way I have been welcomed into the wedding community by fellow vendors.
7. If a bride would like you to recreate a cake she saw on Pinterest, would you accommodate that?
I always like to help a couple make their cake a reflection of them, but I love it when they come to me with inspiration photos. It really helps to get a sense of their style. Some things on Pinterest are just too good to be true, or out of my comfort zone. In that case we usually discuss some alternatives that still achieve the feel they are shooting for, and in some cases is also more budget-friendly. For example, a couple may bring me a photo of a cake with intricate fondant ruffles that can cost upwards of $9+ per serving. A similar look can be achieved with buttercream at a lower price point. I am also lucky to be part of an “unofficial network” of other amazing bakers with different skill sets that I either collaborate with, or refer couples to, too.
8. Do you have cake tasting? Is there a charge?
We offer tastings for large wedding cakes, or cakes in conjunction with a dessert buffet order. We prefer to do a consultation via email or phone, and send a proposal to a client prior to scheduling a tasting to be sure we are a good fit for each other, and be sure we have a date available.
The charge is $20 for two guests, and $5 per additional guest. Since the shop is small, we try to limit parties to a total of four guests.
Tastings of custom menus for dessert buffets are available once a couple has reserved their date with us, but many of our menu items can be purchased directly from our pastry case during our regular hours.
